Llevar a hervir y esperar que los choros se abran. Retirarlos inmediatamente del agua hirviendo para que no queden duros y dejarlos enfriar. Una vez fr\u00edos retirarlos del caparaz\u00f3n y limpiarlos.<\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong style=\"text-align: justify;\"><span style=\"color: #008000;\">Cortar las almejas en tiras, enjuagar y hervir de 15 a 20 segundos en agua. Escurrir inmediatamente y colocar en un recipiente con agua y hielo. Reservar.<\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong style=\"text-align: justify;\"><span style=\"color: #008000;\">Cocinar los langostinos o camarones en agua hirviendo con sal, de 2 a 3 minutos. Escurrir y conservar en agua fr\u00eda. Agregar sal y luego el arroz. Mover hasta que se ponga brillante. <\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">Agregar \u00bd taza del vino blanco seco y dejar que el alcohol se evapore. Agregar el caldo de mariscos preparado (caliente). Llevar a hervir y luego bajar el fuego al m\u00ednimo. <\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">Tapar la olla y dejar que el arroz se cocine (aproximadamente 20 minutos) y granee. Retirar y enfriar.<\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">En una olla grande verter el resto del aceite y agregar la cebolla picada, el resto del ajo molido, sal y pimienta, laurel , or\u00e9gano, p\u00e1prika o piment\u00f3n, aj\u00ed y el tomate. Cocinar a fuego fuerte y agregar \u00bd taza de vino blanco. Dejar que se evapore el alcohol. <\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">Agregar el arroz, las arvejas cocidas y mezclar. Agregar los choros, almejas, langostinos reservados. Mezclar y agregar las conchas y aros de calamar crudos. <\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">Esperar que se cocine el calamar y las conchas por 1 \u00f3 2 minutos y retirar del fuego. Rectificar la saz\u00f3n. Si se desea, agregar 1 aj\u00ed limo.\u00a0<\/span><\/strong><\/li>\n<li style=\"text-align: justify;\"><strong><span style=\"color: #008000;\">Esta receta es para 12 o 14 platos aproximadamente.<\/span><\/strong><\/li>\n<\/ul>\n<h2><strong><span style=\"text-decoration: underline; color: #003300;\">ACOMPA\u00d1AMIENTO:<\/span><\/strong><\/h2>\n<p><span style=\"text-decoration: underline; color: #003300;\"><span style=\"text-decoration: underline;\">SALSA CRIOLLA O DE CEBOLLA:<\/span><\/span><\/p>\n<p><span style=\"text-decoration: underline; color: #003300;\"><span style=\"text-decoration: underline;\">Ingredientes:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #008000;\">2 cebollas medianas<\/span><\/li>\n<li><span style=\"color: #008000;\">1 \u00f3 2 <a href=\"http:\/\/www.yanuq.com\/glosarioconsul.asp?termino=aj%EDamarillo\" rel=\"nofollow\"><span style=\"color: #008000;\">aj\u00ed amarillo <\/span><\/a>fresco, sin semillas ni venas, cortados a la juliana<\/span><\/li>\n<li><span style=\"color: #008000;\">Sal<\/span><\/li>\n<li><span style=\"color: #008000;\">Pimienta<\/span><\/li>\n<li><span style=\"color: #008000;\">Jugo de 3 limones<\/span><\/li>\n<li><span style=\"color: #008000;\">Aceite vegetal<\/span><\/li>\n<li><span style=\"color: #008000;\">Culantro o perejil picado finamente<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline; color: #003300;\">Preparaci\u00f3n:<\/span><\/p>\n<ul>\n<li style=\"text-align: justify;\"><span style=\"color: #008000;\">Cortar cebollas en tajadas bien finas. Poner a remojar en un bol con agua, mezclando bien. Escurrir y dejar que sequen.<\/span><\/li>\n<li style=\"text-align: justify;\"><span style=\"color: #008000;\">Colocar las cebollas en un bol, sazonar con sal y pimienta.<\/span><\/li>\n<li style=\"text-align: justify;\"><span style=\"color: #008000;\">Rociar el jugo de lim\u00f3n. Incorporar aj\u00ed y aceite al gusto.
